Sweet Potato Casserole
- 4 cups peeled, chopped sweet potatoes
- 1/2 cup dates, soaked 20 minutes
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon Himalayan salt
- 1/2 cup water
- 1/4 cup raw agave syrup
Place the sweet potatoes, water, dates, cinnamon, and vanilla in a food processor and puree. Pour into dish. In a seperate bowl, toss the remaining salt and honey. Scatter over the top of the dish. Makes 6 servings.
Yummy Yams
2 – 3 sweet potatoes
1 cup shredded coconut, dried
2 apples
1/4 cup ginger root
4 lemons juiced
2 oranges, juiced
1 cup walnuts, finely chopped (or ground in a coffee grinder)
Chop sweet potatoes, apples, and ginger and process in a food processor, please divide the mixture into four parts and add juices, to avoid burning out the motor..
Place mixture in a large bowl. Add shredded dried coconut, lemon juice, orange juice, and chopped walnuts.
Mix all ingredients thoroughly
For a smoother consistency, in the food processor, process all ingredients throughly.

Each month has its own special character and prominence marked by the seasons of a solar year and man-made reasons for celebration. Every single day of each month of the year is a holiday to someone in the world as a result of their birth. One of the favorite gifts to present someone on their birthday is their birthstone.
Essentially, birthstones are minerals, cut and polished into gems which can be set into metal and worn as jewelry. One such story can be found in the Holy Bible which gives an account of Aaron, a high priest to the Hebrews. Worn as a ceremonial garment, the breastplate was set with twelve different gemstones which represented the twelve tribes of Israel, and through it God revealed his divine will for his people.

17 And thou shalt set in it settings of stones, even four rows of stones: the first row shall be a sardius, a topaz, and a carbuncle: this shall be the first row.
18 And the second row shall be an emerald, a sapphire, and a diamond.

20 And the fourth row a beryl, and an onyx, and a jasper: they shall be set in gold in their inclosings.
21 And the stones shall be with the names of the children of Israel, twelve, according to their names, like the engravings of a signet; every one with his name shall they be according to the twelve tribes.

Purple lotus
This is the mystic lotus, represented only in images belonging to a few esoteric sects. The unfolding of the flower is said to reveal the divine spiritual heart.
To the ancient Egyptians, a lotus or sesen was a sacred symbol of rebirth. The lotus grows in muddy water, rising to the surface and opening in the morning, then It closes in the evening and falls to the water. Because of this rising and setting, the lotus is likened to the sun and is regarded as a symbol of creation, death and rebirth. According to one creation myth, a giant lotus emerged from the watery chaos at the beginning of time. Out of its center, the sun itself rose on the first morning.
A Lotus has many uses. The flower extract has been called a spiritual elixir, It helps to bring peace to the mind by calming and relaxing the nervous system. The Hawaiian Duck (Anas wyvilliana) is a species of bird in the family Anatidae. It is endemic to the large islands of Hawaiʻi.The former range of the Hawaiian Duck included all of the main Hawaiian islands except the island of Lānaʻi. Now the Hawaiian Duck only exists on the island of Kauaʻi. The Hawaiian Duck was extirpated on all other islands, but was subsequently reestablished on Oʻahu, Hawaiʻi, and Maui through release of captive-reared birds. However, all the Hawaiian Ducks in the reestablished populations have bred with feral Mallard ducks and have produced hybrid offspring (Griffin et al. 1989); consequently, "pure" Hawaiian Ducks are still only found on Kauaʻi.
Moku'ae'ae Islet, pictured here, is just offshore from the peninsula. It is a bird sanctuary and often home to the Hawaiian monk seal who may be seen lazing in the sun near the shoreline.
Awesome view from the peninsula home of the Kilauea Lighthouse, which is the northernmost point of the main Hawaiian Islands. Nearby is the Kilauea Point National Wildlife Refuge, home to a diverse population of nesting seabirds and the only such sanctuary in the islands. Residents include the red-footed boobies, the Laysan albatross, and the great frigate bird with its 8-foot wingspan.

Poipu Beach is most famous for being a place where the endangered Hawaiian Monk seals sometimes sunbathe unabashedly on the shore. There are roughly only 1,300 Hawaiian Monk Seals remaining and about 20 swim in the waters of Kauai.
